Welcome to the Shimazaki Sake Brewery.

Previously, we used the basement of the sake brewery’s bottling plant as a sake-aging warehouse. However, due to the increase in the amount of sake in storage, the current sake-aging space was built in 1999. 

The Cave is the site of a former underground factory, built to produce tanks towards the end of World War II. Inside The Cave, around 100,000 bottles of sake, dating back from 1970 to the present, are stored.

The average temperature is around 10 degrees Celsius, which is the ideal environment for aging sake. Utilizing the natural environment and our own unique aging method, we have created a distinct, high-quality flavor.
