当蔵では、現代の機械に頼らず、時間をかけて優しく手作業で搾る極めて希少な「佐瀬式(させしき)」という伝統手法を守り続けています。この繊細で手間のかかる工程が、日光の清らかな伏流水と見事に調和し、驚くほどまろやかで滑らか、かつ気品のある味わいを生み出しています。

We preserve the incredibly rare “Sase” method, gently hand-pressing our sake over time without the use of modern machinery. This delicate, labor-intensive process harmonizes perfectly with Nikko’s pristine groundwater to produce a remarkably mild, smooth, and elegant flavor profile.

七代続く小規模な酒蔵であるため、その生産量は非常に限られており、当蔵で生産される日本酒の多くは、日光に直接足を運んでくださったお客様のためだけにご用意しております。しかし、今後海外の皆様にも、本来の味わいである「原酒(加水や濾過をしていないお酒)」の日本のクラフト酒造りの力強く、ありのままの魂に触れられる機会をご提供していきたいと思っております。

As a 7th-generation boutique brewery, our production is exceptionally limited, with many of our bottles traditionally reserved only for visitors to our historic Nikko cellar. We specialize in authentic Genshu (undiluted and unfiltered sake), offering international importers a highly exclusive opportunity to share the raw, powerful soul of Japanese craft brewing.

Our Founder's Pursuit of the Perfect Water

完璧な水を求めた創業者の探求

1879年(明治12年)、当蔵の創業者は「最高の水」を求めて長年探し歩いた末、ついに日光連山の理想的な軟水の伏流水に巡り合い、この地に酒蔵を構えました。この素晴らしい名水を引き立てるため、最高級の「山田錦」と、「夢ささら」のような地元・栃木産の酒米を使い、絶妙なバランスと豊かな味わいを持つ日本酒を醸し上げています。

Our founder established this brewery in 1879 after a long search for the ultimate water source, finally discovering the ideal, soft groundwater of the Nikko mountains. To complement this exceptional water, we carefully use premium Yamada Nishiki and locally sourced Tochigi rice varieties like Yumesasara to craft a perfectly balanced, rich-tasting sake.

Kashiwazakari Daiginjo 'Sugao' Genshu - 柏盛 大吟醸「素顔」

A true masterpiece born from our brewers' absolute devotion. This Daiginjo is an unfiltered, undiluted "first press" (Muroka Genshu), crafted with premium Yamada Nishiki rice and Nikko’s pristine "Senryo-sui" groundwater. Gently hand-pressed using our historic "Sase" method, it features a gorgeous aroma and a refined, crisp, and elegantly dry finish.

Kashiwazakari Junmai Ginjo 'Sugao' Genshu - 柏盛 純米吟醸「素顔」

Awarded the Silver Medal at the prestigious SAKE COMPETITION 2023. This Junmai Ginjo is a luxurious "first press" (Ichiban-shibori), meticulously crafted from Tochigi's exclusive Yumesasara rice and the celebrated pure waters of Nikko. Radiating grace, it offers a beautifully fruity bouquet and an exquisitely elegant mouthfeel—a highly sought-after masterpiece.

Kashiwazakari Muroka Genshu 'Sugao' - 柏盛 無濾過原酒「素顔」

Our most popular masterpiece. This freshly pressed, unfiltered, and undiluted sake (Shiboritate Muroka Genshu) is bottled exactly as it leaves the press to capture the true, unadulterated essence of sake. Crafted with local Tochigi Gohyakumangoku rice, it boasts a remarkably clean, slightly dry profile. Rich, full-bodied flavor with a bold and elegant punch leaves a lasting impression.

jyunmai Ginjo Nikkoji - 純米吟醸日光路

A beautifully refined Junmai Ginjo, characterized by its crisp mouthfeel and gentle, inviting aroma. Carefully brewed using Tochigi’s exclusive Yumesasara rice, it offers a beautifully balanced, slightly dry profile at an approachable 15% ABV. Its clean and elegant nature makes it an exceptionally versatile companion, effortlessly elevating a wide variety of cuisines.
