SHIMAZAKI SAKE BREWERY

Pioneering Aged Sake in Nasu-Karasuyama

Our Heritage

Founded in 1849, our brewery carries the bold spirit of “Azuma Rikishi” (Sumo of the East), a name chosen by our sumo-loving second generation to symbolize unbeaten strength. For over 170 years, we have upheld this legacy by brewing rich, powerful sake that reflects the resilience and history of our family.

The Art of Cave Aging

Since 1970, we have pioneered long-term aging by storing a portion of our annual Daiginjo production in our private underground cave, originally dug during WWII. This unique, constant environment allows our sake to mature slowly, developing complex aromas and a mellow depth that cannot be replicated elsewhere.

Water & Terroir

We brew using the sweet groundwater of the Naka River, a water source historically prized for creating sake that is perfectly suited for long-term aging. We pair this water with locally sourced rice, including Tochigi-exclusive varieties like Yumesasara and Tochigi no Hoshi, to capture the true essence of our region in every bottle.

Our Products

UROKO Yamahai Junmai Genshu

A Yamahai Junmai Genshu aged for 2 to 3 years in our brewery’s private underground cave. It reveals a complex bouquet of caramel, nuts, and vanilla. Mellow and silky-smooth, this sake is designed to harmonize beautifully with your meal, enhancing every bite.

UROKO Daiginjo 10-Years aged

Hidden away in our underground cave for more than a decade, this Daiginjo has evolved into perfection. The aging process has created a complex aroma where zesty spice meets sweet blossoms. Experience a voluptuous, nectar-like texture that feels as smooth as honey.

UROKO Junmai Ginjo 5-Years Aged

A Junmai Ginjo aged for over 5 years in our cave cellar. It offers a beautiful harmony of aromas, blending gentle Ginjo notes with hints of vanilla and pear. Despite its age, the flavor remains remarkably fresh and crystal-clear, with a mellow, rounded finish.
